Red Lentil Dahl

This Red Lentil Dahl will keep you warm and cozy this winter. It’s loaded with plant-based protein that will fill you up and fuel you throughout the day. Whip up a batch of this Red Lentil Dahl, and you’re in for a flavorful meatless Monday, or a week’s worth of delicious meal-prepped lunches.

 

Ingredients

1 1/2 cup red lentils

1 quart vegetable broth or water

2 small yellow onions, diced

1 Tbsp garlic, minced

1 Tbsp cumin, whole

2-3 Tbsp ginger, minced

1 tsp turmeric

4 Roma tomatoes

2 tsp coriander

2 tsp salt

1/4 cup lemon juice

1 Tbsp oil or butter for pan

1 tsp garam masala

Optional: cilantro for garnish

 

Directions:
  1. Over medium heat in a large sauce-pan, cook onions, garlic, and cumin in oil or butter
  2. Add remaining ingredients except for garam masala and cilantro, increase heat to high and bring to boil
  3. Reduce to a simmer and cook covered for 10-12 minutes, or until lentils are tneder
  4. Add garam masala and garnish with cilantro
  5. Enjoy on a bed of brown basmati rice
